Salada de Couscous

Ingredientes

Couscous:

  • 1 xícara (chá) de água (250 ml)
  • ½ xícara (chá) de Sakura Light (125 ml)
  • ¼ xícara (chá) de Sake Mirin Kenko (60 ml)
  • ¼ xícara (chá) de suco de limão (60 ml)
  • 1 colher (sopa) de azeite (15 ml)
  • 1 ½ xícara (chá) de couscous marroquino (300 g)
  • ½ cebola roxa fatiada finamente (100 g)
  • ¼ salsão em cubos pequenos (50 g)
  • 100 g de damasco cortado em tiras finas
  • 1 maçã em cubos pequenos (100 g)
  • 100 g de tomate-cereja cortado ao meio

Molho de ervas:

  • ½ xícara (chá) de azeite (125 ml)
  • ¼ xícara (chá) de Sakura Light (60 ml)
  • ½ maço de salsinha picada finamente
  • ½ maço de hortelã picada finamente
  • ½ maço de manjericão picado finamente
  • 1 xícara (chá) de nozes picadas (90g)

Modo de preparo

  1. Couscous: misture a água, o Sakura Light, o Sake Mirin Kenko, o suco de limão e o azeite e leve ao fogo até ferver. Despeje o líquido sobre o couscous marroquino, tampe e deixe descansar por aproximadamente 10 minutos, até que seja absorvido.
  2. À parte, misture a cebola, o salsão, o damasco, a maçã e os tomates e reserve.
  3. Com a ajuda de um garfo, solte o couscous cuidadosamente, misture aos legumes e reserve na geladeira.
  4. Molho de ervas: misture todos os ingredientes e coloque por cima do couscous.

Rendimento: 6 porções

Tempo de Preparo: 20 minutos

Dicas: A receita pode ser feita no dia anterior e reservada na geladeira. Não mexa o couscous ao adicionar o líquido. Solte-o somente depois que os grãos absorverem o caldo.
